As a southern gal, this recipe means a lot to me. Yes, I normally only eat pecan pie at the holidays, but it elicits childhood memories with each and every bite. It literally took me over a decade to get this one right. No sloppy drippy filling here. The secret is the tapioca starch. Let the nostalgia commence.<br />
<br />
<b>Down Home Pecan Pie</b><br />
<b><br />
</b><br />
1 cup firm silken tofu<br />
3/4 cup dark karo syrup<br />
1 cup brown sugar<br />
1 tsp. vanilla<br />
1/4 tsp. cinnamon<br />
5 Tbsp. tapioca starch<br />
1/4 cup<a href="http://www.earthbalancenatural.com/"> Earth Balance Buttery Sticks</a><br />
2 Tbsp. sugar<br />
1 cup whole pecans<br />
1 <a href="http://www.arrowheadmills.com/product/graham-cracker-pie-crust">graham cracker crust</a><br />
<br />
Preheat oven to 350 degrees Fahrenheit. In a blender/food processor all ingredients with the exception of the pecans until it is creamy. Remove about 1/2-3/4 cup of the filling, then add the rest to the crust. In a small bowl toss the whole pecans in the leftover filling. Lastly, layer them onto the top of the filling.<br />
<br />
Bake in the oven for 20-25 minutes or until pecans begin to turn golden brown, then cover with foil. Bake another 35-40 minutes until the pie is set. It should not be jiggly anymore. Slice and serve warm, or cover and reheat slices in microwave before serving. Vanilla coy/coconut ice cream pair well with pecan pie.</div>

I joined the committee to help plan <a href="http://www.tcvegfest.com/">Twin Cities Veg Fest</a> this year. If you're in town, you don't want to miss it! Some days you just need something quick and easy. You know, days where half the family has a stomach bug. Pancakes are gentle on your stomach when not feeling well, and it is all the better to have a veggie in there too.<br />
<br />
The tofu scramble can be varied to include whatever veggies you have on hand, just make sure they are mostly cooked before starting the tofu scramble portion. Here is the <a href="http://growingupveg.blogspot.com/2010/04/whats-for-breakfast.html">starter recipe</a> we use. Avocados add a delicious creaminess.<br />

<b>Pumpkin Spice Pancakes</b><br />
<br />
2 cups flour<br />
1/4 cup oil<br />
2 Tbsp. baking powder<br />
2 cups non-dairy milk<br />
1 can of pumpkin pie mix<br />
<br />
In a large bowl, mix together the flour and baking powder. Whisk in the remaining ingredients until batter is smooth (small lumps are fine). Heat a skillet or griddle to 350 degrees/medium high heat. Pour a ladle's worth of batter to make the pancakes. Once it begins to bubble, flip and allow to cook until done. Serve hot.</div>

To substitute for the eggs, whisk: <br />
2 Tbsp. Flax<br />
6 Tbsp. Water<br />

Let sit for 3-4 minutes then whisk again. It should be ready. <br />

To promote rising of the bread, I add: <br />

<br />

This is "the big one" for me. My youngest is off to full day Kindergarten, and after seven years of usually having a little one around, I'll be primarily on my own.<br />
<br />
Many parents cheer the start of school, but it is always bittersweet for me. I cherish those slow summer days, where we can spend all day at the pool, on a nature walk, at a museum, running through the sprinkler or being lazy at home. Memories are made on those days, pictures and feelings shelved in my head.<br />
<br />
I've never cried at the start of school, as my daughter has always been there to hold my hand while the bus pulls away. She would look up, smile at me, and we'd start our day together. Today I'm lucky, as she'll be with me two more mornings, my hand won't be empty. Kindergartners don't start until Thursday. I've no doubt there will be tears this Thursday, and not my daughters.<br />

Enough with the mushy, wistful mommy business, and on to banana split parfaits. Since the start of school is eagerly anticipated with nervous excitement, I like to start it off with something a little special.<br />

There is no fancy recipe for this.<br />

<b>Vegan Banana Split Parfait</b> (makes two)<br />
<br />
1 chopped banana<br />
1 large vanilla coconut yogurt (our favorite is <a href="http://www.sodeliciousdairyfree.com/products/cultured-coconut-milk">So Delicious</a>)<br />
1/4 cup mini-chocolate chips (<a href="http://enjoylifefoods.com/our-foods/chocolate-for-baking/chocolate-for-baking-mini-chips/">Enjoy Life's semi-sweet chips)</a><br />

In a clear glass start with a layer of strawberries, then yogurt, peanuts, yogurt, banana, yogurt, coconut whipped cream. Then sprinkle with chocolate chips and top with a cherry. Voila, first day of school treat!<br />

Over this weekend, I turned our kitchen upside down testing out a few variations of <a href="http://growingupveg.blogspot.com/2012/01/tea-party-with-baked-valentines.html">baked cake donuts</a>. I've made them with <a href="http://www.earthbalancenatural.com/">Earth Balance</a> before, and wanted to try out coconut oil and shortening for fats.<br />
<br />
My family were the eager taste testers, and the coconut oil won by a landslide. Next in line was the <a href="http://www.earthbalancenatural.com/">Earth Balance</a>, and the least favorite across the board was shortening.<br />

Along with tweaking the <a href="http://growingupveg.blogspot.com/2012/01/tea-party-with-baked-valentines.html">donut recipe</a>, I tried out a few new types of frosting: maple, white chocolate, <a href="http://growingupveg.blogspot.com/2011/01/maple-pecan-butter.html">pecan butter</a>, and chocolate. Both types of chocolate were the favorites, but the maple was pretty delicious too. The <a href="http://growingupveg.blogspot.com/2011/01/maple-pecan-butter.html">pecan butter</a> was more subtle in flavor, but a sprinkling with coconut chips finished it off nicely.<br />

<li><span style="font-family: Trebuchet MS, sans-serif;">Sift together all the dry ingredients excluding the brown sugar: flour, sugar, baking powder, baking soda, corn starch, cinnamon, ginger, and nutmeg. Add brown sugar and mix well with other dry ingredients.</span></li>
<li><span style="font-family: Trebuchet MS, sans-serif;">Add to the dry ingredients: oil, vanilla, applesauce, and curdled soy or almond milk.</span></li>
<li><span style="font-family: Trebuchet MS, sans-serif;">Mix on low until just combined, making sure to scrape the bowl once. </span></li>
<li><span style="font-family: Trebuchet MS, sans-serif;">Fill muffin cups 3/4 full. Bake in oven for 15 - 18 minutes or until an inserted toothpick comes out clean. </span></li>
<li><span style="font-family: Trebuchet MS, sans-serif;">Frost cupcakes with <a href="http://growingupveg.blogspot.com/2013/02/butterscotch-cupcakes-with-pecan-butter.html">butterscotch frosting</a> after the cupcakes have cooled completely, then drizzle with <a href="http://growingupveg.blogspot.com/2013/02/butterscotch-cupcakes-with-pecan-butter.html">pecan butter drizzle icing</a>.</span></li>

They were perfectly light a fluffy.</span><br />

<li><span style="font-family: 'Trebuchet MS', sans-serif;">Use an 1M frosting tip to make the bunny head (you could also cut a large hole in the tip of a zip lock bag about a 1/2 inch wide)</span></li>
<li><span style="font-family: 'Trebuchet MS', sans-serif;">Attach the ears by pushing into the frosting.</span></li>
<li><span style="font-family: 'Trebuchet MS', sans-serif;">Using a little dab of frosting attach a chocolate chip to two jelly beans and place them for eyes.</span></li>

<b>No Bake Chocolate Almond Coconut Cookies</b></div>

1/4 cup coconut oil (should look like shortening, but not as smooth)</div>

1 1/2 heaping Tbsp. cocoa powder</div>

1/4 cup almond butter</div>

1/2 cup shredded coconut</div>

<li>Get out all ingredients and lay out a sheet of wax paper 1 and a half feet long on a pan or counter.</li>
<li>On the stove, melt the coconut oil on medium-low heat. </li>
<li>Stir in sugar until it melts into the coconut oil. </li>
<li>Add almond milk and cocoa powder, then bring to a boil for 90 seconds. Do not start timing until it is at a rolling boil. </li>
<li>Remove from the heat and add the remaining ingredients: almond butter, shredded coconut, almond meal, and extract. Stir until well mixed.</li>
<li>Spoon about 2 tablespoons worth of cookie batter onto the wax paper. </li>
<li>Allow to cool and set approximately one hour.</li>
</ol>

*If your cookies do not harden, the cookie batter did not boil long enough. I've thrown mine into the oven on 350 for a 3-5 minutes and it helps them to set.</div>

My son LOVES volcanoes, so he was beyond excited about a raspberry lava volcano chocolate bundt cake. Try saying that three times fast.<br />

It is a simple recipe, which entails using the <a href="http://growingupveg.blogspot.com/2013/02/butterscotch-cupcakes-with-pecan-butter.html">classic wacky or crazy cake recipe</a>, along with a raspberry drizzle icing. I <a href="http://growingupveg.blogspot.com/2013/02/gluten-free-strawberry-coconut-rice.html">made my own raspberry powder</a> for it.<br />

If you prepare the wacky cake recipe it will make 4 mini bundt cakes or one large one.<br />
<br />
<b>Raspberry Icing</b><br />
<br />
1/2 cup raspberry powder<br />
1 cup powdered sugar<br />
2-4 Tbsp. coconut milk<br />
1 tsp. vanilla<br />
<br />
Whisk together all ingredients, until it is creamy and smooth. It should be thin enough to pour onto the cake. About the consistency of thicker syrup.<br />

As you can see, my kids really liked it. Maybe a little too much. I just stopped my son from licking the cake.<br />

When my daughter took a shine to Strawberry Shortcake, I did a little happy dance. While the modern changes to Strawberry were really not necessary, nostalgia still floods my mind when I play with her shortcake dolls. </div>

Each birthday I ask my children what type of cake they want, and I was beyond thrilled when my girl said Strawberry Shortcake.</div>

The cake house was made from three stacked layers of 8 inch rounds using my <a href="http://growingupveg.blogspot.com/2011/02/strawberry-shortcake-cupcakes.html">Strawberry Shortcake cupcake</a> recipe. To support to weight I used cake round flats in between each layer with cake dowels in between them.</div>

My only modification to the recipe was using fluffy vanilla frosting instead of whipped cream between layers, as I was concerned it would only soak into the cake and cake boards between layers. I did add a squirt of <a href="http://store.veganessentials.com/soyatoo-whipped-soy-topping-p1733.aspx">vegan whipped cream</a> on top, as it just wouldn't be strawberry shortcake without it. I bought mine at Whole Foods.</div>

Valentine's Day is almost upon us. If you are seeking a decadent dessert to make for your loved ones (or satisfy a little self-love), these donuts should do the trick.<br />
<br />
You can dress them up by spending a little more time decorating or just add sprinkles for a little flourish. This is a veganized version of a doughnut recipe I came across in <a href="http://www.familycircle.com/recipe/cakes/chocolate-cake-doughnuts/">Family Circle</a>.<br />
<br />
<b>Chocolate Cake Donuts</b><br />
2 cups flour<br />
1/2 cup cocoa powder<br />
1 tsp. baking soda<br />
1/2 tsp. salt<br />
1 cup soy/coconut/almond/hemp milk<br />
1 tbsp. vinegar<br />
1 cup brown sugar<br />
1/2 cup melted margarine (I use <a href="http://www.earthbalancenatural.com/">Earth Balance</a>)<br />
2 tsp. vanilla extract<br />
1/2 cup applesauce<br />

<ol style="text-align: left;">
<li>Preheat oven to 350 degrees Fahrenheit. Lightly spray donut pan with non-stick spray.</li>
<li>Measure out non-dairy milk and add vinegar. Let it sit while preparing other ingredients.</li>
<li>Combine melted margarine, applesauce, vanilla, and sugar, then mix well.</li>
<li>Sift in the remaining dry ingredients: flour, cocoa powder, baking soda, and salt. </li>
<li>Add in the non-dairy milk (the vinegar makes it a vegan buttermilk).</li>
<li>On a slow speed mix until the batter is even, being careful to not over mix.</li>
<li>Fill the donut cavities 2/3 full, and bake for 12-14 minutes, until toothpick comes out clean.</li>
<li>Remove and allow to cool completely before icing.</li>

<li>In a bowl, whisk together the raspberry powder and powdered sugar.</li>
<li>Add raspberry extract, and then a tablespoon at a time of non-dairy milk until icing slowly drips off of a spoon. If it is to runny, add a little more powdered sugar.</li>
<li>Apply to cooled donut with a basting brush or by spreading it on with a spatula. </li>
<li>Decorate with sprinkles or add to sandwich bag with a small tip cut off to drizzle it on (this makes the little "stripes" on the donut.</li>
<li>*Follow the<a href="http://growingupveg.blogspot.com/2013/02/gluten-free-strawberry-coconut-rice.html"> link</a> to former recipe which explains making strawberry powder. The same applies to freeze dried raspberries. You may need to double sift to remove seeds. </li>

I'll not go into the details of how long these lasted in our household, but.....lets just say they vanished rapidly. It was as if the road runner ran through, only stopping to eat and say "meep, meep."<br />

When I've made vegan rice crispy treats using the traditional recipe, they often get pretty crunchy after setting. You'll have no such problems with these. This will also please the gluten-free crowd.<br />
<br />
<b>Strawberry Coconut Rice Crispy Bars</b><br />
<br />
1/4 cup + 2 Tbsp. coconut oil (should be solid at room temperature)<br />
3/4 cup strawberry powder<br />
3 Tbsp. water<br />
2 tsp. strawberry extract (McCormick Imitation Strawberry Extract is labelled gluten-free)<br />
1 bag vegan marshmallows (I used <a href="http://www.chicagoveganfoods.com/dandies_vegan_marshmallows/">Dandies</a>)<br />
5 cups rice crispies (gluten-free kind)<br />

<li>Melt the coconut oil in s medium sized sauce pan on medium-low heat. </li>
<li>Once it is melted, add the marshmallows, and stir until they are completely dissolved (if you leave them they may burn to the bottom).</li>
<li>Stir in strawberry powder and water. Mix until it is well-incorporated.</li>
<li>Turn the heat on the burner down to simmer, and slowly stir in the rice crispies. Mix until they are all evenly coated.</li>
<li>Press into a 9 x 12 sized glass dish or pan. I use wax paper to get it in with out sticking to everything.</li>
<li>Allow to cool and set 5 minutes, then cut into squares or make heart shapes using a heart cookie cutter.</li>

My hubby and I made these for my son's 6th birthday, and I must say these are my favorite ones we've done yet. Both of us are big Star Wars geeks. Happily our son appears to be following in our footsteps.<br />

These bad boys were made out of <a href="http://satinice.com/">vegan fondant</a>. I prefer <a href="http://satinice.com/">Satin Ice</a>, as it actually tastes good. While I know it may seem daunting to work with it, really all it takes is <a href="http://satinice.com/how.php">some simple tips or video tutorials</a>. Toppers like these were made using <a href="http://www.williams-sonoma.com/products/star-wars-cookie-cutter/?pkey=e%7Cstar%2Bwars%7C9%7Cbest%7C0%7C1%7C24%7C%7C1&cm_src=PRODUCTSEARCH||NoFacet-_-NoFacet-_-NoMerchRules-_-">cookie cutters</a>, so it is no more challenging than making/decorating sugar cookies.<br />
<br />
Earlier in the week, I cut out the basic shapes using colored <a href="http://satinice.com/">fondant</a> and <a href="http://www.williams-sonoma.com/products/star-wars-cookie-cutter/?pkey=e%7Cstar%2Bwars%7C9%7Cbest%7C0%7C1%7C24%7C%7C1&cm_src=PRODUCTSEARCH||NoFacet-_-NoFacet-_-NoMerchRules-_-">Star Wars cookie cutters</a>. In order to minimize the amount of food dye used for the black ones, I did them in <a href="http://satinice.com/product.php">chocolate fondant</a>. It was my first time working with <a href="http://satinice.com/product.php">chocolate fondan</a>t, and my oh my! It tastes just like a brownie. I *highly* recommend it.<br />
<br />
Let the toppers harden uncovered while you are adding the details using frosting, edible markers and/or a silver glaze. The cookie cutters have the detailing on them, and would still look fantastic without the added embellishments.<br />
<br />
<b>Helpful tip:</b> let them harden or wait until closer to party time to put them on the cupcakes. The frosting softens them up and they will begin to curl downward.<br />

Each Thanksgiving, our family extends an invitation for our family to participate in a vegan meal with us. Thus far, it has centered around the traditional type meal. In a 1.5 quart (1.5 L) glass round pyrex bowl, we emptied two packages of the gravy, pouring some over the top of the roast. Then we baked it for 30 minutes, completely flipped it over, and roasted another 30 minutes. We basted the Tofurky half-way through the second round of roasting.<br />

Viola! No spongy, chewy texture here, just nice and juicy <a href="http://www.tofurky.com/tofurkyproducts/holiday_products.html">Tofurky</a>! Seconds please...<br />

Pumpkin spice is a flavor my family can't seem to get enough of this time of year. When munching on a Biscoff cookie, it dawned on me that they'd make a perfect cookie crust for a fall bar or pie.<br />
<br />
While it has been ruminating awhile, today I finally got around to making a recipe. It is pretty quick if you are using a food processor or Vitamix to make it. Just check out that delicious cookie crust!<br />

<b>Pumpkin Pie Spice Bar with Biscoff Cookie Crust</b><br />
<br />
1 15 oz. can pumpkin purée<br />
1 package of Silken Firm Tofu<br />
1 cup brown sugar<br />
1 1/2 tsp. pumpkin pie spice<br />
1Tbsp. Corn starch<br />
1 1/2 tsp. vanilla<br />
<br />
<b>Biscoff Cookie Crust </b><br />
<br />
1 package of Biscoff Cookies<br />
4 Tbsp. Earth Balance Buttery Sticks<br />
<br />
Preheat oven to 350. Put entire package of Biscoff cookies into the food processor, and grind until large chunks are gone. Add in melted/softened Earth Balance margarine and combine. Press into the bottom of a 9 x 13 inch pan.<br />
<br />
Mix tofu in food processor or Vitamix until creamy. Add the remaining ingredients and blend well. Pour over crust in pan and spread evenly. Bake for 45-50 minutes or until toothpick comes out clean.<br />

Pumpkin Shaped Bars: Use a pumpkin cookie cutter to make pumpkin shaped bars. To create a jack o'lantern, slice up chocolate into triangles and a mouth.<br />

My latest creation for our <a href="https://www.facebook.com/pages/VegKins/244189053557?fref=ts">Vegkins</a> Annual Halloween Party. I wanted to do something simple, but festive. The head of the cat was made using a 1M frosting tip, but you could replicate it by using a large sandwich bag and cutting a large hole in the corner utilizing a 'homemade' frosting bag.<br />
<br />
To make the eyes, I used vegan "M & Ms," but Skittles would work well too. The pupils were drawn on using an edible ink marker (Wilton makes these). The nose is simply lightly dyed pink vanilla frosting. The ears are chocolate wafer disks cut into quarters*. These were from Trader Joe's. Lastly, the whiskers and nose were made using vanilla frosting.<br />

<i>*Tip: In glass measuring cup boil water in the microwave. Put the knife in it for a few seconds before quartering the chocolate.</i><br />

<b>Chocolate Wacky Cake Recipe</b><br />

3 cups flour<br />
2 cups sugar<br />
2 tsp. baking soda<br />
1 tsp. salt<br />
1/2 cup cocoa powder<br />
2 cups cool water<br />
2 tsp. vanilla<br />
2 Tbsp. vinegar<br />
3/4 cup vegetable oil<br />

Preheat oven to 350 degrees. Sift together dry ingredients. Mix in wet ingredients, being careful to scrape the sides of the bowl. Only mix until well combined. Fill lined muffin/cupcake pan with liners and fill them 1/2 full. Bake for 18-20 minutes or until toothpick comes out clean. Allow to cool completely until frosting.<br />

<i>Makes 3 dozen cupcakes</i><br />
<br />
<b>Fluffy Chocolate Frosting</b><br />
<br />
1/2 cup Earth Balance Buttery Sticks<br />
1/2 cup vegetable shortening<br />
2 tsp. vanilla<br />
4-6 Tbsp. non-dairy milk<br />
2/3 cup cocoa powder<br />
3-4 cups powdered sugar<br />
<br />
Cream together the margarine, vanilla and shortening. Slowly mix in powdered sugar, cocoa powder and non-dairy milk, alternating between the two. Once mixed well, beat for about ten minutes until frosting is nice and fluffy. Add more powdered sugar or soy milk to obtained desired texture.<br />

Wolf pupcakes are what I made for my sister's baby shower. Why wolf pups you say? Her baby was nicknamed "Little Wolf," because both parents have a lot of hair. The theory was their baby would too. It turns out they were right, and my adorable little nephew Oscar was born with a full head of dark hair.<br />
<br />
My sister really loves the <a href="http://growingupveg.blogspot.com/2011/09/pecan-butter-frosting-on-butter-cupcake.html">pecan butter frosting</a> recipe I created, as well as <a href="http://growingupveg.blogspot.com/2011/09/pecan-butter-frosting-on-butter-cupcake.html">veganized "butter" cupcakes</a>. There were also chocolate flavored cupcakes, utilizing the infamous chocolate <a href="http://growingupveg.blogspot.com/2012/02/double-chocolate-mini-bundt-cake-with.html">crazy cake recipe</a>.<br />
<br />
The inspiration for the pupcakes came from ones I saw fashioned like dogs. I had to made a few adjustments to made it more like a wolf, such as a longer nose. It was not too complicated to put together, but it did take time. The bottom cupcake was frosted like a sunburst, starting at the middle. Then a mini-cupcake was attached sideways onto the large one using a toothpick.<br />
<br />
The nose and ears are made from <a href="http://www.chicagoveganfoods.com/dandies_vegan_marshmallows/">Dandy Marshmallows</a> cut into noses and ears, which were also attached with toothpicks. I made the eyes from vegan white chocolate chips and mini chocolate chips attached together with a small bit of frosting. The nose was also a small chocolate chip attached with a bit of frosting.<br />
<br />
To make the face, first attach the ears and nose with toothpicks. Then frost around ears and on the face. Lastly, attach the eyes and nose chocolate chips. Viola, you've got yourself a wolf pupcake. Enjoy!<br />
