Vegan Pumpkin Spice Cookies with Maple Icing


One of my goals with this blog, is to demonstrate how easy it is to bake without eggs and dairy products. And really, why not? No cholesterol or cruelty involved in making your food. Better for your health, the environment, and your conscience.

Before going vegan over a decade ago, I played around with vegan baking. It was a basic requirement for me to move forward with choosing this lifestyle. Lucky for me, baking vegan is just as easy and delicious.

Typically I bake from scratch, but hoped to help provide an easy resource for people who want a fast, simple, home baked treat. These are tasty without incing, but WAY better with it.

Using the Betty Crocker Pumpkin Spice Cookie Mix, I simply altered the instructions slightly to veganize them.


Directions:

1/2 cup vegan margarine (I recommend Earth Balance Buttery Sticks)
2 Tbsp. water
1 tsp. ground flax mixed vigorously with 2 Tbsp. water

Follow directions on package for baking.

Maple Frosting

1 - 1 1/2 cups powdered sugar (depending on desired thickness)
2-3 Tbsp. almond, soy or coconut milk
1 tsp. maple extract or flavoring

Wisk almond/soy/coconut milk and extract into sugar until all lumps are gone. Dip cookies in frosting or paint it on using a pastry brush. These were sprinkled with cinnamon, which was delicious!

  1. Baking is what got me into veganism really-- I've been baking since I was a little kid and when I met my first vegans in college they were all like "no one ever gives us dessert." It was such a bummer to me to think of anyone not getting to have baked goods that I set out to bake good vegan things for them right away... and once I realized how easy/possible it was, a huge block between transitioning from vegetarian->vegan disappeared.

  2. I am going to look for these tomorrow at the store and try them with your mods. I have gotten a bit snobby about only baking from scratch, but sometimes I want treats faster and will take a shortcut.

  3. Today my boyfriend actually bought a box of spice cake mix and added a 15 oz can of pumpkin to it, which gave us delicious pumpkin muffins that are also relatively healthy (~100 calories). These cookies look good, too, especially with that maple icing.

  4. This is cool. I'm a vegan mom too and I've long wondered how to convert grocery store baking items into vegan items. I bought the mix yesterday I think we'll make it this week. Thanks so much for sharing this!
